Ham and Pea Salad, it’s Easy Peasy…

No one wants to cook when it is hot outside!  This dish can be served as a meal or a side.  It is satisfying and refreshing.  This dish can also easily be made gluten free.  Just check your labels to make sure your mayo and ham are gluten free.

The Grocery List:

2 bags of frozen peas, slightly defrosted

1 16 oz block of sharp cheddar cheese cut into cubes

8 oz of cubed cooked ham (you can use up to 16 oz if you like a meatier dish)

1 half diced yellow onion

1 cup of mayonnaise

1 Tablespoon of Dijon mustard

1 Tablespoon of Italian seasoning

salt and pepper to your taste preference ( I use just enough to dust everything with it)


To prepare, place the peas in a strainer and rinse with cold water until they are slightly defrosted.  Let the water drain from the peas.  Place all the items in a large mixing bowl and stir together.  Place the salad in the refrigerator for at least 2 hours before serving.
