It is hot and muggy. Here is another quick meal that will not overheat your home.
2 cans of tuna in olive oil (or in water; if using in water tuna drain it well)
3 servings of boiled and cooled gluten free rotini or elbow noodles
3 cups of thawed frozen green peas
2 tablespoons of non-pareil capers, chopped into small pieces. Add 2 more tablespoons if you really like capers like me!
1 tablespoon mayonnaise
2 tablespoons dried oregano
1/2 cup of Italian Salad Dressing (or enough to coat the food)
1/2 cup of finely pealed and chopped onions
Directions: Mix all items well in a large bowl. Refrigerate for at least 20 minutes before serving.
Makes Approx 4 Servings
