If you made our Slow Cooker Sunday Turkey Crock Pot Turkey Breast with Herb Cream Sauce this post is a great way to use up leftovers!
4 Washed and Scrubbed Sweet Potatoes- do not dry them!
Leftover cooked Turkey breast (or use cooked chicken)
Spices: sea salt, Italian seasoning, sage, celery seed, paprika, and cayenne pepper (optional)
Toppings (see below)
Place your wet potatoes in the bottom of a slow cooker (or crock pot). Heat on low 6 to 7 hours or until fork tender.
Season your leftover turkey with spices listed above (the amount will depend on how much turkey leftovers you have) I used about a teaspoon of each. Just add enough to lightly cover the turkey and stir well.
Top your sweet potato with the gently warmed turkey (use the stove or microwave)
Top with additional toppings of your choice. Here are some great topping combination ideas:
cranberry sauce and cream cheese
greek yogurt and cucumbers
greek yogurt and salsa
butter and sour cream
butter and a little applesauce
